Breakfast Mac 'n Cheese


So I'm only into the second video and I've already had quite a few requests for this recipe. Had quite a few taste testers and this is definitely a hit! Let me know what you think in the comments below! Well, I won't make you read any longer. Recipe is as follows:


1 pound of pasta

1 pound of breakfast sausage (hot for a kick)

1 yellow onion, diced

1 red bell pepper, diced (optional)

1 tsp of olive oil (optional)

1 tsp of garlic powder

4 tbsp of butter

6 tbsp of flour

8 oz of cream cheese

4 cups of milk

2 cups of pepper jack cheese

2 cups of Sargento’s 4-State Cheese

2 cups of shredded cheddar cheese (no preference on mild or sharp)

8 eggs

3 biscuits (optional; to use as breadcrumb topping for texture)


*If you’ve decided to use the biscuits it would be best to make them the night before to save time!


Preheat oven to 375 degrees and bring a large pot of salted water to a boil. Cook pasta to al dente and drain. In a large skillet cook the sausage breaking it up. Once done move to a medium bowl and set aside. Then add diced yellow onion and bell pepper to skillet that was used for sausage and cook for 4 to 5 minutes or until softened and add salt, pepper and garlic powder to taste (I added a bit of olive oil due to some of the grease from cooking the sausage was gone when I moved it to the bowl). Once done add onion mixture to sausage. Next add 4 eggs to bowl and season with salt pepper and garlic powder and whisk then add to heated skillet and scramble; when done set in another bowl and set aside. Add butter to pan and melt on medium heat and whisk in flour cooking for 2 minutes while constantly whisking. Slowly whisk in milk then bring to a boil then simmer for 2 – 3 minutes until it is thickened. Turn off heat and add cream cheese and whisk until melted. Then add pepper jack cheeses and Sargento’s cheeses and whisk until melted. Add salt, pepper and garlic powder to taste. Add pasta, sausage mixture, and scrambled eggs to cheese sauce and stir until evenly mixed. Pour into buttered casserole dish. Add 4 eggs to bowl and whisk then add more cheeses and whisk a bit more then pour over mac and cheese. Top off with shredded cheddar cheese. If you made the biscuits this is where you would crumble them up then place on top of the casserole. Place in oven for 25 – 30 minutes.
