Here's the recipe to the best damn lamb sliders you'll ever have!!! Let me know in the comments what you think!!!
3 cloves of garlic (or garlic powder)
1 shallot (half diced, have coarse cut)
Container of mushrooms (I used baby bellas)
1 lb. of ground lamb
1 package of mini Gouda cheese slices
Brioche slider buns
Place garlic and diced shallot in food processor to finely chop. Next combine garlic/shallot mixture in bowl with ground lamb. Add salt and pepper and shape ground lamb into a ball, cover with saran wrap and let sit in fridge for twenty minutes. Next add olive oil to sauté pan on medium high heat to caramelize other half of shallot and mushrooms. Add shallots and cook for five to ten minutes. Add mushrooms and cook for five to ten minutes. Next add salt to pan and continue to cook and stir constantly. Next add a splash of red wine (or water) and cook while stirring for five to ten minutes (add more splashes as desired). When mushrooms and shallots are tender and a dark color you are done. Heat cast iron skillet at medium high. Get ground lamb that has been refrigerated and make into patties. Make patties cup-like. Add butter to heated cast iron skillet and let melt. Add lamb patties to skillet and put a pinch of salt in the middle. IMPORTANT: DO NOT MASH PATTIES DOWN! LET THEM KEEP THE JUICES!!! Cook each side for 10 minutes. Once cooked add slice of Gouda cheese and continue to cook until you see cheese start to sweat. Remove from skillet and place on between slider buns. Add caramelized shallots and mushrooms on top of cheese and enjoy!
