Sweet Potato Pancakes w/ Honey Cinnamon Butter with Salmon Scramble (Recipe)

Greetings!!! I assume you're here for the detailed recipe from the first episode of Beats 'n' Eats? Don't worry, I won't keep you long so you can go make this delicious breakfast. I combined three recipes from Epicurious, Bon Appetit and allrecipes.com for the sweet potato pancakes and the salmon scramble is my own. So check out the links about for more great recipes. Sweet Potato Pancakes (Yields 8 - 10 Pancakes)

2 large sweet potatoes

4 tsp butter

1 tsp ground cinnamon

2 1/2 tbsp brown sugar

1 cup all purpose flour

3 1/2 tsp baking powder

1 1/2 tsp vanilla extract

1 tsp nutmeg

3 eggs

Cut sweet potatoes in cubes then place into a pot of lightly salted water and bring to a boil for 20 - 25 minutes. Reserve one cup of starch water. Then drain potatoes and return to pot and add your butter, cinnamon and brown sugar. With a potato masher begin to mash your sweet potatoes adding a splash of starch water as your go. The more you add, the creamier it will get. Once mashed add three eggs and stir until eggs have been completely mixed in. In a mixing bowl add flour, baking powder, milk, and nutmeg. Mix until batter is creamy. Then add in sweet potato mixture and vanilla extract and mix thoroughly.

Honey Cinnamon Butter

3 tsp butter

1 1/2 tbsp honey

2 tsp ground cinnamon

In a small bowl combine butter, honey and ground cinnamon. Mash with fork then mix until you get a nice cinnamon-y brown colour. Place mixture in fridge until ready for use.

Cream Cheese Icing

1 stick of cream cheese

1 cup of granulated sugar

1 tbsp vanilla extract

First you will want to sit cream cheese out until it get room temperature. Next combine cream cheese, sugar and vanilla extract in a mixing bowl. Mix on lowest possible setting for 5 minutes. Taste to make sure granulated bits of sugar are gone. If not, keep mixing until completely dissolved. Tip: I would suggest this part be done the night before. It will save a lot of time!

Salmon Scramble (serving of 3)

2 salmon fillets

garlic powder or 2 cloves minced garlic

Italian seasoning (optional)

3 eggs



4 oz. cream cheese

3 scallions

Preheat oven to 425 degrees. On a cooking sheet add a drizzle of oil and brush it until coated. Place 2 fillets on sheet and season with salt, pepper, garlic powder (or minced garlic) and although I didn't mention it on the video I did add italian seasoning a bit later. Cook skin side down for 10-15 minutes. Remove from oven and flip fillets over and put back in the over for 5-7 minutes. When done break salmon up in to small pieces. Tip: I would suggest this also be done the night before to save valuable time!

In a medium bowl combine three eggs, salt, and pepper and whisk. Cut scallions and separate the whites from the greens. You will cook with the whites and use the greens for garnish/extra flavor. Add butter to medium high heat pan and add scallion whites and let it cook for 3-4 minutes or until they've soften a bit. Add egg mixture and scramble for 2-3 minutes. Next add cream cheese and salmon and scramble until cream cheese has melted and has coated around the eggs and salmon. Plate dish and eat!!!!
